I am thinking about making a dove-tailed box with ceder, oak, and maple. Can I use these (3) woods without any problems? I have heard that you shouldn't mix some types of wood together.

A lot will depend on the size of the box you are making. Different types of wood expand and contract in differing amounts. But if the box is small those differences are practically mute. Cedar is a very soft wood and you may have some problems with DTs in it especially if you are routing them. And you might run into some issues with the sanding dust of the Cedar getting into the pores of the Oak, and/or staining the light colored Maple a little. BTDT (2X) But other than that I see no reason not to combine those woods and I look forward to seeing the outcome.
