Looking for a rollable clear finish

I'm sure this sounds quite strange, but I need a simple, quick-drying finish that I can apply to what is effectively a retail display. I've got a lot of wood panels that need to be coated out quickly. I really don't want to spray lacquer in this weather, and a matte, textured finish from a roller is fine for what I'm doing. Not a fan of varnishes because of the time they take to cure, and the amount of gunk they pick up, but I'm willing to listen to anything people may suggest.

Anyone have a suggestion?

Have you tried General Finishes Polyacrylic?

It is waterbased, dries quickly and doesn't yellow like oil based poly. I switched to top coating with two coats of clear shellac and then follow up with a few coats of Polyacrylic sprayed - usually a satin sheen. Using this type of schedule, I can complete all of my top coats in less than a day.
