Is soft maple acceptable for a cutting board or does is it have to be hard maple?

Yes you can use soft maple for a cutting board. It's only soft by name. It is still a hard wood.

In terms of hardness, soft maple is equal to cherry, and a tad softer than walnut, all of which are used in cutting boards. Though the janka hardness scale is measured along the board face (i.e. perpendicular to the grain), end grain generally follows the same trend.
