are there any chemicals - other than ammonia - that can be used to fume wood? And what effect can be obtained?

Rubio Monocoat has some wiping stains that are pretty good. I'm not sure what the main ingredient is but it is not ammonia . They are have 4 or 5 different options, so you'd need to get samples to figure out what you need.

You can "ebonize" oak using just steel wool soaked in water long enough to rust.

Other chemical treatments that provide unique colors includes potassium permanganate which do a similar aging to ammonia. POTASSIUM PERMANGANATE | WoodFinishing Enterprises.
Also potassion dichromate


Oxalic acid can be used to bleach wood white. The best example of this is Wendell Castle Ghost clock in the Renwick. It is bleached mahogany.

Also peroxide and sodium hydroxide (lye) or household bleach solution also work


I am not sure what chemicals they use but pioneer wood does a great job for a barnwood look and the commercial product for driftwood works well

The vinegar/steel wool can be enhanced by forst applying tannic acid solution. However this can go blue

All of these depend on the wood type.
