Right now I am figuring out where to start with wood working and am pullin in many directions. Welcome Mike, starting simple with shop projects are a sound plan.
My interests have alway been all over the map too, no shame in dabbing many different ones. I found the cost of specific equipment and space necessary for a woodworking track was my limiting factor. Recently was curious about CNC woodworking, took a fantastic introductory class, but decided too keep it as a casual interest not an investment.

Building cabinets and shelves for shop use is a good starting point. It doesn’t have to be pretty, just functional. You can hone your skills of making flat surfaces, fitting drawers and mounting doors.

It is a bit of a haul for you from F-V, but the Klingspor Extravaganza is October 23rd and 24th in Hickory and is a great time to meet some of the NCWWers in person as well as a day or two of some great demos and simply being around a bunch of woodworkers!
