I myself would not put them on the sides, just on the ends, and leave lateral openings for movement. If you really feel like you need to put them into the sides, only do it on one side, or really leave a slot.

If it's just a table top of no great size, then you could probably get away with just two z clamps, one on each end in an elongated slot. Unless you're afraid of warping of the table top to a great degree, then I see no great need for all of those. Of course, perhaps you do a lot of table tossing, and so need to make sure the top is well secured.

It all depends upon what you need. But as for need, four, two on each end, is more than enough.

I have nothing against over-engineering furniture. I built a Roubo for crying out loud with 5" long through tenons. Over-engineering is in my blood. But I'm more worried about wood movement and the stress of trying to make a screw move within a slot in four different spots at the same time, while also forcing the clamps through slots in four other spots. That might be enough stress to crack it. But that would mean you'd just need to make another top. Not a problem, right?

Z clips are what I use for all my small tables. I also put on all four sides, but cut the groove they fit in deep so there is plenty of space for movement. On larger tables I make a wood clip which basicly works the same way.

Structurally there is nothing wrong with the setup, 4 clips is a good plan just in case the top tries to lift at the edges. As long as the face of the clips on the long grain edge are not hard against the side you are just fine. With the force available by moving wood, the screws don't need to be loosened much at all. If you do, the top might rattle if knocked and that would be a bad thing.
