Clay, I'd just paint the heads of the lag bolts with the white paint and they will basically disappear from sight. Lots easier than trying to make hole plugs.

Nice work! Have you considered making some "mesh" drop-ins to provide deck shade. Then in cooler weather, you can lift them out.
